Lobster is a seafood delicacy that everyone loves. If you want to take someone out to dinner, the lobster dinner will definitely be appealing. They will love you for it.
Doesn’t that lobster look delicious? It tastes even better, no matter how you cook it. Today, we will cook a lobster dish with tomato vodka cream sauce, paired with one of the Direct Cellars’ finest wines, “Bright Willow Sauvignon Blanc.”. Now let’s get started…
Ingredients
- 2 lobsters Live
- Whole Butter
- 1 Garlic clove Minced
- 1 Shallot Minced
- Marinara Sauce
- Parmesan Cheese
- Heavy Cream
- 1/2 cup Vodka
- White Pepper to taste
- Salt to taste
Directions For Preparing The Lobster Dish
You start by pre-cooking two lobsters way ahead of time. After it cools, remove the meat from the lobster paws and tails.
Add bacon to the pan and render to pull the fat and flavor out of the bacon. Add butter and melt, then add the shallots and the garlic and cook on low heat. This allows the garlic and cloves to flavor the butter.
Saute what is now lobster meat until it starts to sizzle. Pour vodka into the pan being very careful because it will flame up. You don’t want to start a fire. The alcohol will burn off and become calm.
Tomato Vodka Cream Sauce
First, you saute the Lobster meat. Do not sauté the tails. If you sauté the lobster tails, they will overcook and be tough. You can only use claw and knuckle meat. Put the meat in a pan and bring it to a sizzle. Sizzle it well. Then De Glaze the pan with the vodka. Add half a jaw of Marinara sauce. Allow the flavors of the lobster and season to blend with the marinara sauce. Simmer it for a few minutes while the pasta is cooking.
Fettucine is recommended because it holds sauce well. Boil the noodles and add 1/2 teaspoon of salt. cook for 8 to 10 minutes. Do not overcook. Do not rinse the pasta; the starch helps it to thicken and hold the sauce.
Top off the 2 dinners with a couple of splashes of heavy cream. And finish with the Parmesan cheese
Serve the sauce over fettuccine noodles.
