Chicken Satay Skewers is a wonderful addition to our Wine and Dine Event. This delicious recipe is served on skewers with a peanut sauce that is lightly sweetened. It is so delicious especially when you pair it with a wine from the Napa Valley collection. The wine is Venum Cellars Rose. it is from our Wine of the Month Club. It will ship right to our front door every month.
This recipe was part of our Wine and Dine Wednesdays Event that is broadcast every week. Jennie Elliot was the chef that cooked this tasty meal. She was a delight to see and did a very good job cooking this meal.

Use These Items To Make It Real
- ¾ pound skinless, boneless chicken breast halves – cut into 1-inch strips
- ½ cup of coconut milk
- 1 ½ teaspoons brown sugar
- 1 clove garlic, minced
- ½ teaspoon ground black pepper
- 1 teaspoon curry powder
- ½ teaspoon salt
- 1 cup of coconut milk
- ¾ cup chicken stock
- 2 tablespoons lime or lemon juice
- ½ cup creamy peanut butter
- ¼ cup brown sugar
- 1 tablespoon curry powder
- Salt to taste
- 10 (6 inches) wooden skewers, or as needed, soaked in water for 30 minutes
Let’s Put It Together
Mix 1/2 cup of coconut milk, garlic, 1 tsp curry powder, brown sugar, salt, and pepper, and stir until the sugar is dissolved. Pour over the chicken, cover, and let stand for 2 hours.
You need a saucepan for this section. put 1 cup of coconut milk, peanut butter, 1 tbsp of curry powder, and 1/4 cup brown sugar, chicken stock, in the saucepan. cook over medium-high heat. Simmer for 5 minutes, stirring constantly, until it is smooth and thick. Take it off the heat and stir in lime juice and soy sauce, season to taste with salt.
Now, pre-heat your grill to medium-high heat temperature.
Assemble the chicken onto the skewers. Grill 4 to 5 minutes on each side or until it is cooked through. Then serve with peanut sauce and add the side dish of the following accompaniment.
For the Accompaniment
- 2 lbs of riced cauliflower or riced mixed vegetables
- 1 small or ½ large onion (diced)
- 1-2 cloves garlic
Melt some of the coconut oil in a large skillet. Saute the diced onion and minced garlic (about 5 minutes, add the butter, put the riced vegetables in, stir fry gently.
Such a delicious twist and how good this looks. You and your family and friends will be well pleased with this delicious pairing.
