This week’s Wine And Dine Wednesday was a glowing overview of How to make Chicken Parmesan Casserole -Italian Wine. It was viewed from Step 1 to finish. This dish was beautifully paired with a Stivale Italian White wine. Usually, a dish like this one would be paired with red wine, such as a Merlot. Believe it or not, this made a beautiful pairing.
The Chicken parmesan casserole was paired with Stivel Del Sole, a fruit-flavored white wine from Italy. Every month I received my monthly wine shipment from Wine Ambassador’s Wine Discovery Club where I am a member. This wine is from the Trebbiano grapes. It is one of the most popular grapes in Italy and other parts of the world. The taste of the yellow fruit and citrus made this meal taste so good. This particular wine improved the meal so well, it was the right choice.

The Recipe for Chicken Parmesan Casserole
Ingredients
Chicken Breast – 2-4-6-8 boneless, skinless chicken (one per person) breast 4 cans of tomato paste, your favorite seasonings (Italian seasoning blends, minced garlic, pork with fat, minced garlic, one lb. ground beef, pork tips for fat, one onion and one green pepper (optional), 2 cans sliced mushrooms (optional)
Italian bread crumbs. olive oil, 6-8 eggs, shredded mozzarella cheese, one lb. of Angel hair pasta, l bottle, Stivale Italian white wine.
General directions
Start with the sauce… Add 4 cans of tomato paste and 4 cans filled with water to make stock. (16 cans). Add one lb of ground beef, browned, this is the sauce. Brown your small pieces of fatty port tips and add them to the sauce, add all of the seasoning or your blend of Italian seasoning. chop half of the onion and add. chop green pepper (optional) and add 2heaping tbsps of minced garlic.

Cook the sauce for several hours, stirring frequently, on medium heat for the first hour, lower the heat after it comes to a boil once. The 2nd day, start by heating it again, a few hours before you start to complete the dish. You (Substitute: You can substitute the homemade sauce if you don’t have time to make it by using 3 jars of Great Value brand Garden Chunky sauce and add the seasoning from above.
After you make the marinara sauce the only secret is pork tips with fat, this gives it flavor. Remove the pork tips when the sauce is ready.
Preparing The Chicken Breast
First: Preheat oven to 350 degrees
4-6 eggs whipped in a bowl
4-6 chicken breasts fully thawed
a dish full of Italian bread crumbs
a pan full of olive oil on the stove medium-high heat
Drop the breasts into boiling water until they are just starting to turn white, remove quickly. (internal heat) (OPTIONAL)
Second: Dip the chicken breasts in the egg batter, then roll in bread crumbs (fully covered them) then drop them into a pan of oil and lightly brown on both sides. almost searing and raising internal heat some more.
When the chicken breasts are browned, remove them and put them in a glass baking dish. (casserole or lasagna dish). Place a thin layer of sauce on the bottom of the pan before you add the chicken. Place the chicken breast in the dish. Fill the spaces with sauce, leaving a little to place on top of each breast, exposed, do not submerge.
Last step before placing in the Oven: Put a heavy layer of Mozzarella cheese over the entire dish. Use a top to cover or use foil. Bake for 30-45 minutes at 350 degrees (all oven are different…watch the boil and the cheese color)
Prepare your angel hair pasta to your liking.
Dinner is Served!
Remove from the oven, wait 10 minutes. Put one full chicken breast on a small bed of pasta, cover it lightly with a medium serving of sauce, sprinkle parmesan cheese lightly on top just before serving (optional) and serve with Stivale Italian Wine.
